Banana & Coconut Bread |

Banana and Coconut Bread
- 125g butter, softened
- 1 1/4 cups sugar
- 2 large eggs
- 2 ripe bananas, peeled and mashed (yes I know they're expensive but it's worth it -when you can pay $5 a slice in a cafe)
- 1/2 cup milk
- 1 1/4 cups plain flour
- 1 cup dessicated coconut
- 1 teaspoon baking powder
- 1 teaspoon of cinnamon
- Preheat oven to 180 ° or 160 ° for fan forced oven.
- Cream butter and sugar until light and fluffy then beat in eggs one at a time.
- Stir in mashed banana, the the milk, then fold in the dry ingredients.
- Mix until smooth.
- Pour into a 10 X 20 cm loaf / cake pan for about an hour.
- Cocktail stick should come out clean when tested.
- (drink the cocktail first)
I lifted this from my old recipe blog ... it was originally sent to me by Geneine in a recipe swap.
Cook with caution if you are home alone...you'll eat the lot.
