Biggest Morning Tea ~ Banana Coconut bread

Banana & Coconut Bread

This is actually just banana bread I think but it's the only pic I had :)
Banana and Coconut Bread
  • 125g butter, softened
  • 1 1/4 cups sugar
  • 2 large eggs
  • 2 ripe bananas, peeled and mashed (yes I know they're expensive but it's worth it -when you can pay $5 a slice in a cafe)
  • 1/2 cup milk
  • 1 1/4 cups plain flour
  • 1 cup dessicated coconut
  • 1 teaspoon baking powder
  • 1 teaspoon of cinnamon
  1. Preheat oven to 180 ° or 160 ° for fan forced oven.
  2. Cream butter and sugar until light and fluffy then beat in eggs one at a time.
  3. Stir in mashed banana, the the milk, then fold in the dry ingredients.
  4. Mix until smooth.
  5. Pour into a 10 X 20 cm loaf / cake pan for about an hour.
  6. Cocktail stick should come out clean when tested.
  7. (drink the cocktail first)

I lifted this from my old recipe blog ... it was originally sent to me by Geneine in a recipe swap.
Cook with caution if you are home'll eat the lot.

Here is another banana bread recipe I use without coconut (and no mixer) or Caramel Walnut Banana Cake .

See the theme's all because of the Banana detectives ...I have banana mashing on my mind. (& I just edited the bashing bit in the recipe never noticed it before )
